Simple, Delicious.

The one problem with having fresh eggs is that they are harder to peel when hard-boiled then older eggs. It's really not much of a problem; but I do try to cook up the ones that are oldest (usually only a few weeks) when making one of my favourite lunches.

Egg salad is pretty simple, hard-boiled eggs & mayonnaise, then whatever you like. Dill works really well but my absolute favourite is a little hot curry powder.
